Paleo Chocolate Chip Skillet Cookie

You know what's better than a warm skillet made chocolate chip cookie with a fudgy center and crispy edges? One that's grain, dairy, and refined-sugar free!
My family used to love going to BJ's and getting a pazookie- but my body didn't like it too much. Traditional chocolate chip cookies can have up to 32 grams or 2 1/3 tablespoons of sugar. That's why I bring my take on the classic skillet chocolate chip cookie and it REALLY hits the spot. Enjoy!
Chocolate Chip Cookie | Skillet Recipe
Ingredients:

2 cups blanched almond flour

1/4 cup coconut sugar

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg at room temperature

3 tablespoons ghee, melted

1 teaspoon vanilla extract

1 teaspoon almond extract

1/3 cup paleo- friendly chocolate chips (I used "Enjoy Life" brand)
Instructions:
Preheat oven to 350 degrees. Spray a mini cast-iron skillet with cooking oil spray OR lightly grease it with ghee or coconut oil.
In a large bowl, mix the dry ingredients together (first four on the list) until well blended. Add the egg, ghee, vanilla, and almond extracts one by one. Once completely blended, stir in the chocolate chips. Put the dough in the cast-iron skillet and spread evenly. Bake at 350 F for 15-18 minutes until the top of the cookie starts to brown. Enjoy straight from the oven (be careful- handle is hot!) and add your favorite non-dairy ice cream on top. I guess you could say that these are some delicious paleo / vegan chocolate chip cookies!
