Beef & Quinoa Stir-Fry

Gluten Free | Dairy Free | High-Protein

This is one of my go-to meals at home. It's so easy to meal prep and makes 3-4 servings (depending on how hungry you are). 

The peanut sauce gives it a nice creamy, tangy flavor and adds some heat. Make this Beef & Quinoa Stir Fry to impress a crowd or meal prep it for yourself!

I eat this on repeat because it's easy, tasty and full of nutrient-dense foods. Quinoa is a complete plant-based protein and the added veggies, beef and fresh herbs make it a nutritious & delicious meal!

Ingredients:

 

Stir Fry:

  • 1 cup quinoa

  • 2 cups water (or broth for more flavor)

  • 1 lb grass-fed ground beef

  • 2 tbsp avocado oil

  • 3 tbsp coconut aminos

  • 1 cup shredded carrots

  • 1 cup sliced mushrooms

  • 4 green onions, chopped

  • 1 lime, cut into wedges

  • Fresh cilantro, chopped (for garnish)

  • Optional: Sriracha or chili sauce for added heat

Peanut Sauce:

  • 1/4 cup creamy peanut butter

  • 2 tbsp avocado oil

  • 2 tbsp coconut aminos

  • 1-2 tsp sriracha or chili sauce (optional, adjust to taste)

  • 1-2 tbsp water (to adjust consistency)

Instructions:

  1. Cook the Quinoa:

    • Rinse the quinoa under cold water.

    • In a medium saucepan, combine quinoa and water (or broth). Bring to a boil over high heat.

    • Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed.

    • Fluff with a fork and set aside.

  2. Cook the Beef:

    • In a large skillet or wok, heat 1 tablespoon of avocado oil over medium-high heat.

    • Add the ground beef and cook until browned, breaking it up into small pieces as it cooks. This should take about 5-7 minutes.

    • Once cooked through, remove the beef from the skillet and set aside.

  3. Cook the Vegetables:

    • In the same skillet, add the remaining tablespoon of avocado oil.

    • Add the shredded carrots and sliced mushrooms. Cook for about 5 minutes until they start to soften.

    • Add the chopped green onions and cook for an additional 2 minutes.

  4. Combine Ingredients:

    • Return the cooked ground beef to the skillet with the vegetables.

    • Add the cooked quinoa and stir to combine all ingredients.

    • Pour in the coconut aminos and mix well to evenly distribute the flavor.

    • Cook for an additional 2-3 minutes until everything is heated through.

  5. Prepare the Peanut Sauce:

    • In a small bowl, whisk together the peanut butter, avocado oil, coconut aminos, and sriracha or chili sauce (if using).

    • Add water a little at a time until the sauce reaches your desired consistency.

  6. Serve:

    • Serve the stir fry hot, garnished with fresh cilantro and a wedge of lime on the side.

    • Drizzle the peanut sauce over the top of the stir fry.

    • If desired, add an extra drizzle of sriracha or chili sauce for added heat.

Makes 3-4 servings depending on how hungry you are. 

Notes:

Veggies- feel free to use whichever veggies you like here! If you don't like carrots/mushrooms or you have other veggies going bad in your fridge, you can add pretty much anything to this Beef & Quinoa Stir Fry! I have made it with cabbage (personal fave), bell pepper, and white onions and it has turned out fantastic. 

Also, if you don't like quinoa, you can sub for rice or cauliflower rice. You can also omit the beef to make it vegan- quinoa is a complete plant protein!
